Jillian Ruhl is currently completing the Master of Science in Applied Human Nutrition and Internship Education Program at Mount Saint Vincent University (Halifax) to become a Registered Dietitian. Her thesis focuses on an environmental scan of wild edible plants and food tourism in Nova Scotia using a relational ecology approach. As a Laboratory Instructor at Mount Saint Vincent University, she has taught areas in ecological perspectives of food, food product development, and food service systems. She also sits on Board of Directors for Critical Dietetics to promote transdisciplinary scholarship in the nutrition profession. With a keen interest in food systems sustainability, Jillian took up beekeeping in 2012. In order to share the marvels she learned in the world of apiculture, she became an organizer of the Halifax Honey Bee Society, and installed a campus beehive at Mount Saint Vincent University. Apiculture is a male-dominated industry so she would like to see more women invest in beekeeping as a hobby or career. She purposely bought a pink beekeeping suit to represent the female beekeepers!
