Recession Banana Bread

We made this during the crazy egg shortage, but here is our Recession Banana Bread. 1 ripe banana (extra ripe for Mollie)1 egg1 tsp vanilla3 Tbsp oil1/2 cup flour1/4 tsp baking soda1/4 tsp salt1/4 cup brown sugarPreheat oven to 325 F. Mix all ingredients in one bowl - easy cleanup! Bake in muffin tins or a donut pan - should yield 5-6, bake for about 15 minutes.
