What does it take to bring Indonesian cuisine to a wider international audience?On The Rice Table, host Jeff Keasberry talks with London-based chef and restaurateur Pino Edward Sinaga. They first met at the Indonesian Food Outside Indonesia Symposium in Leiden. Now, they continue their conversation about diaspora cooking, cultural identity, and Indonesian food abroad.Born in Bogor to a Batak Sinaga family, Pino grew up cooking with his mother. Batak dishes such as ikan arsik and naniura remain close to his heart. They also reflect Indonesia’s rich regional food traditions.Pino spent more than two decades in hospitality, including at London restaurants and private clubs. In 2019, he opened Pino’s Warung at Camden Market. The business weathered the pandemic and grew into Toba, his restaurant in central London.Pino shares what inspired his journey and his goal of raising Indonesian cuisine’s profile abroad.
